I have been battling acute gastritis for the past week, and this Simple Cod with Sauteed Spinach is the first real meal that I have attempted to eat! LOL The thought of more saltine crackers and apple juice was just too much for me today, it was time to create a simple and delicious meal that was not too acidic or spicy…..

This Simple Cod with Sauteed Spinach is full of flavor and incredibly delicious, but it is also healthy and lacking in any intense flavors as the recipe is written….but the flavors can be kicked up quite easily! 🙂

Heat the olive oil in a large skillet over medium heat. Season the cod with ground black pepper {or seasoning of your choice}…..

and place it in the skillet. Sear the first side and flip over. Cover and cook for 4 to 5 minutes…..

Remove from pan and set aside.

Clean out the skillet and add olive oil. When oil is heated, add the garlic. Cook for one minute, stirring to keep it from burning…..

Add a handful of spinach and toss to combine…..

It was perfect! Light and flaky cod with non-mushy spinach with just enough garlic and lemon to make it not taste like cooked spinach!! 🙂

Notes:

  • Technically garlic and lemon are acidic, but there is not a lot of lemon to cause too many issues…for me at least.
  • For more of a kick, sprinkle cayenne or red pepper flakes over your spinach.
  • For a richer flavor, add 1 Tablespoon of butter to the spinach before serving. {Clarified Butter to remain Whole 30 & Paleo}
  • Thyme would be a nice addition to the cod, or Herbs de Provence.

If you just cannot bring yourself to eat cooked spinach, Sauteed Zucchini and Carrots would make an awesome substitute…..

I would cook the zucchini and carrots first since they take longer than the spinach, set them aside, and then cook the cod. 🙂

Tomorrow I am going to try Butternut Squash Soup in my Instant Pot…..fingers crossed! I also solemnly swear to NEVER take Advil again…ever. 🙁

Simple Cod with Sauteed Spinach is a healthy and delicious meal that is fast enough to make any night of the week , and fancy enough to serve on date night!

Ingredients

For the Cod

  • 2
    Tablespoons
    olive oil
  • 2)
    5 ounce
    cod filets
  • ground black pepper {or seasoning of your choice}

For the Spinach

  • 1
    Tablespoon
    olive oil
  • 2
    cloves
    fresh garlic, minced
  • 10
    ounces
    fresh baby spinach
  • sea salt and pepper, to taste
  • 1
    wedge
    lemon juice, squeezed

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the cod with ground black pepper {or seasoning of your choice} and place it in the skillet. Sear the first side and flip over. Cover and cook for 4 to 5 minutes. Remove from pan and set aside.

  2. Clean out the skillet and add olive oil. When oil is heated, add the garlic. Cook for one minute, stirring to keep it from burning. 

  3. Add a handful of spinach and toss to combine. Saute and stir until spinach is wilted.

  4. Add another handful of spinach, wilt, and continue until all of the spinach is wilted. Squeeze one wedge of lemon over the spinach and toss to combine. Season to taste with sea salt and pepper.

  5. Divide the spinach between two plates, using a slotted spoon to drain off excess moisture. Top with the cod and season with black pepper and lemon strips and serve.
